Recipe: Jalapeño Poppers

I found this recipe on Pinterest from a few different sources, so I don't know who to give credit to, but I have tried a few other recipes for Jalapeño Poppers and this one is by far my favorite! The Fiber One cereal makes the Poppers sweet :)

RECIPE: JALAPENO POPPERS

Ingredients:
-jalapenos
-cream cheese (any kind tastes good, I use 1/3 less fat Philadelphia)
-Fiber One cereal, ground
-egg whites

Directions:
1. Grind up the Fiber One cereal. This can be done with a food processor, a coffee grinder, or by hand with a rolling pin.


2. De-seed the jalapenos and cut them in half, lengthwise.

3. Fill the jalapeno-halves with cream cheese. While you're doing this, pre-heat the oven to 375 degrees.


4. Cover the jalapenos in egg whites, then dip in the ground-up Fiber One cereal.


5. Place the poppers on a cookie sheet.


6. Bake for 25 minutes at 375 degrees. You can play around with the cook time (+/- 5 min). Shorter times lead to crunchier, spicier poppers. Longer times lead to softer, less spicy poppers.
